Seamus O'Connell

About the Chef

Seamus O'Connell was raised in Arizona and began his culinary apprenticeship under acclaimed French fusion pioneer Vincent Guerithault (Vincent's on Camelback, Scottsdale, Az.) and 'New American' chef Christopher Gross (Christopher's, Phoenix, Az).

A move to New York in the early eighties saw him working in the dynamic kitchens of 24 Fifth under Michel Fitoussi, La Reserve with Andre Gailliard, La Tucano under Jaques Maxime, and the newly opened Le Bernardin. Seamus then moved to Ireland for the first time, and spent some time sculpting in the west of Ireland. Following this, Seamus moved to France where he worked under Alain Chapel in Mionnay and at La Tour Rose in Lyon with Phillipe Chavent - both 3 *** Michelin restaurants.

Returning to Ireland he opened The Riverbank Inn in west Cork in 1987 but left to work in The Arbutus Lodge in Cork when his first child Sarah was born 1988.

  • 1989 Opened 1601, Irelands first gastro pub, in Kinsale
  • 1991 Lettercollum House, Timoleague, Co. Cork, with garden and farm
  • 1993 Opened The Ivory Tower , Princes St. Cork, next to the English Market
  • 1995 The Ivory Tower Cookery gourmet patisserie in the English Market
  • 1996 Began studies in Nagasaki Japan in Kei Seiki, the highest art of Japanese cooking, returning to Tokyo and Nagasaki often to teach world cuisine and fusion
  • 1998 Designed and opened The Sea Urchin, Goleen, West Cork seafood restaurant
  • 1999 Designed and opened The Yumi Yuki Club, Tobin lane, Cork- japanese bar restaurant
  • 2000 Designed and opened Pi, gourmet pizza emporium, Washington st. Cork
  • 2003-2004 Presented Soulfood television series
  • 2004 Created Soulfood Cooking Solutions company supplying prepared sous vide dishes to restaurants and pubs
  • 2007 Executive chef Parknasilla Resort, Sneem, co. Kerry- seasonal regional Irish cuisine
  • 2008 Opened Shebeen Chic with Jay Bourke, Georges St. Dublin specializing in Irish grub
  • 2009 Pop up restaurant Shebeen Cuisine, Market lane Cork
